Today I’m going to share with you a great recipe for cashew dip. It’s simple, easy and let’s not forget nutritious and delicious.
2 cups raw cashews soaked for at least 4 hours to bring them to life (alright if you don’t have time don’t do it, but do it next time)
1 cup nutritional yeast
½ teaspoon fresh lemon juice
½ teaspoon garlic powder (you can use fresh, but you don’t want to overpower the flavor of the dip, so be mindful)
1 teaspoon salt
Red chile flakes (you decide how much depending on your sensitivity; a pinch or a ½ teaspoon)
Choice of parsley, cilantro, basil, or oregano leaves
¼ cup fresh filtered water
Drain the cashews. Put all the ingredients, except for the herbs in the blender, Vitamix, Blendtec, or a food processor. Start to pulse and as the mixture begins to thicken start adding the water, 1 tablespoon at a time until the mixture thins. You may not need all of the water.
Taste and adjust salt and red chile flakes as needed. Chop herbs of choice and add at the very end so that your mixture does not turn green. Garnish the bowl of cashew dip with some of the herbs.
Serve with fresh vegetables, especially bell peppers, crackers or pita bread. You can also spread this on toast – yummy.
Eat this anytime of day or night and serve to your guests. They are going to love you for it.
