Rock Your Friday Recipe – Pecan Butter
I love almond butter, but it seems like the container is always empty, something like Winnie the Pooh and his honey jar.
It has become fairly easy to find raw almonds without going to a specialty grocery store – hurrah for nutritional progress - so I decided to start grinding my own almond butter.
I went to the store to buy the almonds and I took a right turn when I saw a package of pecans, my favorite decadent treat. You love that subtle maple flavor too?
At that moment, I decided that for the first time I would make scrumptious pecan butter.
Really easy to do:
Put the package of pecans in the food processor and start grinding – don’t pulse, just a steady grind.
This is the key to making pecan butter – how long do you grind the pecans before they turn to pecan butter?
ANSWER – fairly long
Grind, grind, grind – observe how the pecans go first to a ground saw dust texture and then it seems that the oils are beginning to surface, but no not yet, keep grinding.
You are probably up to 3-4 minutes before you start to see the butter beginning to stick to the side of the container.
You’re not there yet, but soon…
Now is when you add the secret ingredients that turn ground pecans into that decadent flavor that reminds you of raw cookie dough.
That’s right, raw cookie dough (I’ve heard its tops on the cravings list).
Add a short stream of vanilla, almost a teaspoon of cinnamon and a couple of drips of coconut oil.
